Exploring Edmonds, WA
A stroll along Edmonds picturesque Main Street is a chef's kiss.
A sunny summer day in the Seattle area means a drive up to Edmonds, WA, about 17 miles north. Our first stop was Edmonds City Park, a gem of a park. This park is surrounded by trees, with a large playground and even bigger spray park. Our boys had such a blast playing in the water and didn't want to ever stop! This spray park had a giant ball of water, suspended from above, that would collect water and then dump it like a waterfall onto all the kids. The kids loved it! I'd highly recommend this park in the summertime if you have kids that like to play in water.
After hanging out at the Edmonds City Park, we drove a couple of miles to the waterfront area to for dinner at Niles Peacock Kitchen and Bar. This is an award-winning spot for its cocktails. They serve both stone-fired pizzas and Detroit-style pies. I started with The Weekend Special cocktail. This drink has vodka, lime juice, simple syrup, and bitters, and is served with an Aromatized Bubble for a nice show. I really enjoyed the flavor of this drink, although my husband found it a little too sweet when he tried it. It had just the right balance of sweet and tanginess for me. He enjoyed a Manhattan, which is one of his favorite classic martinis.
We ordered two pizzas, a Margherita with a stone-fired crust, and a Pepperoni Detroit style pizza. The crust on the Detroit pizza was suburb. The crust was perfectly thick, and the edges had the traditional cheese-crusted edge. It was a little on the saucier side, but the pepperoni and cheese was perfect. This spot gets packed, so showing up soon after opening is recommended. They open at 4 pm daily.
After dinner we walked around the Edmonds downtown area. Their main street is packed with cute shops, restaurants, coffeeshops, and bakeries. We wandered into The Papery and I purchased a neat guitar pin for my pin collection. Exploring Edmonds was such an enjoyable way to spend a summer Saturday!
