April Food and Drinks

As April wraps up, we highlight some of the eats and drinks that weren't featured on the blog. 

I discovered a sort of healthy chocolate peanut butter fudge to make. You actually make this fudge in your empty blueberry or strawberry container, after you've eaten all the fruit. A great way to reuse the plastic container. I've now made this snack three times, twice with blueberries and once with diced strawberries. 

To make this treat/snack, whatever you want to call it, take your empty fruit container and place some parchment paper inside. Take one cup of any kind of chocolate, 1/2 cup of any kind of nut butter, and about half a cup of blueberries, or any kind of fruit. Melt the chocolate in the microwave in thirty second increments until melted. Stir in the peanut butter.

 At this point you can either layer your fruit on the bottom of the container or stir into your chocolate and peanut butter mixture. Then pour your mixture into the container. Refrigerate until the fudge hardens. The fudge will keep for about a week or so in the fridge. This fudge tastes like it should be bad for you, because it's so yummy. But there's fruit! And the protein from the Peanut Butter! And there's nothing wrong with a bit of chocolate. So, if you're wondering what to do with that last bit of fruit and that last cup of chocolate chips you used for baking? Make this fudge! 



Minecraft: The Movie is a hit in theaters. The movie has now made over 800 million this month. Our family saw it and it was a joy. It was super funny, and entertaining, and if you know anything about the game Minecraft, then you'll understand most of the game references. My sons are big Minecraft fans and loved the movie. We got a cool popcorn bucket out of the experience. We now have a Moana one and this Minecraft one. We cannot get another one, since I ran out of room on top of our fridge for more. 



A couple of weeks ago, we had lunch with our extended family at Mekong Village on Aurora Ave. We noshed on Vietnamese food and caught up. I had this tasty looking bowl with noodles, fish sauce, pork, and an Gio, or egg roll. We also had some really good Thai Iced Tea. 



We ate at The Harvest Vine in Seattle and had so many yummy dishes. We ordered a lot of dessert, because, why not? One of my favorites is the Tarta De Santiago, the Lemon Tart. I love how moist the tart is and how tasty the lemon curd is. 



I decided I needed a new Disney mug for everyday coffee drinking. I have a lot of holiday ones, but not an everyday one. I found this nice clear mug with Mickey on one side and the name Mickey Mouse on the other on Amazon. The glass is really thin, almost like plastic, but besides that, I like it! 




 During our Spring Break trip to Vancouver, BC, we stopped in at a Tim Hortons for a doughnut. Since it was the week of Easter they had a cute doughnut with Easter candy on it. This was an enjoyable doughnut! 



While in Vancouver, we went to a Walmart so my sons could buy some chocolate for their friends. Canada sells some chocolate that's hard to find in the states. So, we usually stock up when we go. They had so many aisles of Easter candy at this Walmart. I found some of the best chocolate I've had- this Kit Kat bunny filled with chocolate eggs. So good!
